And here is the reason why I don’t like Paulo Coelho that much. Terry Pratchett somes it up perfectly:

โ€œIf you trust in yourself. . .and believe in your dreams. . .and follow your star. . . you’ll still get beaten by people who spent their time working hard and learning things and weren’t so lazy.โ€

Paulo Coelho books are all about how easy everything is if you just do what the you are supposed to be doing. While I do believe that everyone has a purpose and a calling, you still need to be able to work hard for it. Also, Terry Pratchett is funny ๐Ÿ™‚ What do you think?

I was inspired by chotisbaatein to post a quote that inspires me once a week. Let’s see how long I can keep it up ๐Ÿ˜‰
So let’s start with this one from Paulo Coelho:

“Everything that happens once can never happen again. But everything that happens twice will surely happen a third time.”

I’ve found it a good rule of thumb, even though I don’t like Paulo Coelho that much. What do you think?

I think I’ve tried every gluten-free pancake recipe, and it always ended up in the trash. Even if the batter tasted good, it never cooked properly, giving a soggy mess. So I decided to try Belgian Waffles instead, because they cook from both sides at once. I was lucky enough to hit the jackpot on the first try:


I know that's not a waffle pan. Sue me.

Based on this recipe, here are my tweaks:
1 1/2 cups gluten-free oat flour
2 tsp baking powder
1/4 tsp salt
Pinch cinnamon
3/4 cup milk, room temperature
2 eggs
5 tbsp oil
1 tsp vanilla
3 tbsp honey

Mix dry ingredients in one bowl. Mix wet ingredients in another. Pour wet into dry and mix until just combined (it will still be lumpy).


See? Lumpy.

Wait 10 minutes while figuring how to use your new toaster and preheating it. Put two large serving spoons of batter so it covers the bottom. Grill for 5 minutes. Let cool on rack and eat!

I spent the weekend with my sister in law and her kids. In the corridor on the way to the bedroom, my SIL put up a lot of small family snapshots. Small pictures, maybe 15×15 cm. The girls at different stages, my brother Z”Lย and SIL together, the eldest on my brother’s shoulders. Suddenly his smile was coming at me from so many different places on the wall. The collage presents a beautiful happy family. But my brother never played with his baby girl, will never have the opportunity to put her on his shoulders, will never grow any older in the family snapshots on the wall.

But he is smiling at me with love and waving at me.

My brother, I miss you so much.
